Apple Cinnamon and Walnut Cookies

INGREDIENTS:

½ cup shortening

1 1/3 cups packed brown sugar

1 egg

2 cups sifted all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon cinnamon

½ teaspoon ground cloves

¼ teaspoon ground nutmeg

1 cup chopped California walnuts

1 cup apples – peeled, cored and finely diced

1 cup raisins

¼ cup milk

1 ½ cups sifted confectioners’ sugar

1 tablespoon butter

½ teaspoon vanilla extract

2 ½ tablespoons half-and-half cream

DIRECTIONS:

Preheat oven to 400 degrees
Beat shortening and brown sugar together until light and fluffy. Beat in egg and blend thoroughly.
Stir together flour, baking soda, salt, cinnamon, cloves, and nutmeg.
Stir half the dry ingredients into creamed mixture. Stir walnuts, apples, and raisins, then stir in remaining half of dry ingredients and milk. Mix well.
Drop from tablespoon 1 ½ inches apart onto lightly greased baking sheet. Bake in the preheated 400 degree oven for 10-12 minuets. Remove cookies from oven, place on racks to cool slightly, and while still warm, spread with glaze.
To make glaze: Combine powdered sugar, butter, vanilla, and enough cream to make glaze of spreading consistency. Beat until smooth. Spread on warm cookies.

3. Are the recipes geared towards teenage girls?
I have a three Fork designation, one fork recipes are very easy recipes that anyone can cook with ease and enjoyment, two fork recipes are slightly more difficult and the three fork recipes are the hardest. I used the Fork designation as a play on words, since Stephenie Meyer uses the town of Forks, Washington as a backdrop in her book series. Also, Stephenie initially named her manuscript Forks, as opposed to Twilight. Teenagers enjoy cooking from LAFB because there are easy instructions and directions. Like Stephenie, she wrote Twilight because of a dream, and didn’t have a particular audience she was writing for. I enjoy cooking and have taught cooking classes for children as well as adults. So my goal is to reignite the spark of passion for cooking in the kitchen, to bring people of all ages back into the kitchen enjoying one another’s company through unique themed recipes.

Well, since vampires don’t eat, werewolves would seem to have better culinary options. In Love at First Bite, I make sure there are plenty of Team Jacob culinary treats, such as Werewolf Chow, Wolf pack Waffles, and Jacob Black’s Grilled Cheese Sandwich. Sprinkled in Love at First Bite, are food quotes from the Twilight Saga books. Edward says, “I wasn’t hunting for food. I was actually trying my hand at, tracking. I’m not very good at it.” For that quote I have an Irritated Grizzly Bear Steak recipe. I also have for the Team Edward fans, I Dare You To Eat Pizza, Edward, Butterscotch Eyes (Bella says Edward’s eyes are the color butterscotch, it is a dessert with butterscotch pudding and little teddy grahams), as well as Vampire Blood Punch, and Edward’s Thirst Quencher.

No one claiming to be a vampire, but a tattoo artist did purchase the book. And a lot of Team Edward and Team Jacob fans. A female prison guard by the name of Velma (not to be confused with Scooby Doo’s Velma Dinkley), after seeing my culinary talents as broadcast on the evening news, camped out all night in her car to come to my book signing and drove a total four hours.

Werewolf Chow

9 cups rice cereal, such as Chex brand
1/4 cup butter or margarine
1 cup chocolate chips, semisweet, or a combination of 1/2 cup chocolate chips and 1/2 cup peanut butter chips
1/2 cup smooth peanut butter, not crunchy
1 teaspoon vanilla extract
1 1/2 cups powdered sugar

Directions: Place the cereal in a large zip-seal bag. Next, microwave the chocolate chips, peanut butter, and butter or margarine for about 1 minute. If the mixture hasn’t melted, stir and place in microwave for another 20 to 30 seconds. Once melted, stir in the vanilla extract. Pour the chocolate chip–peanut butter mixture over the cereal; then add the powdered sugar and shake. Spread the mixture on waxed paper to cool.

Lyonnaise Salade

2 strips of Bacon cut into one-inch pieces

A handful of fresh frisee lettuce, torn into bite size pieces

1 poached egg

1 teaspoon diced red onion

Baby potatoes

1 tablespoon of Red wine vinegar

1 tablespoon sugar

1 tablespoon extra-virgin olive oil

½ teaspoon of Dijon mustard

1 slice of French or Italian bread and a little butter to make buttered croutons (1 teaspoon of butter)

Salt and pepper to taste

Directions: Sauté bacon over medium-high heat until done, about five minutes and then drain fat. It is best to drain the excess fat from the bacon by removing the bacon from the pan or skillet, blotting the extra oil from the bacon with a paper towel. Allow bacon to cool, then cut strips into one inch pieces. Next, cut a slice of French or Italian bread into cubes. Toast on medium-high heat in a small saucepan with a teaspoon of melted butter. Only stir the bread only to turn to the other side once it is toasted. Poach your egg and please review tips for how to poach an egg. Once egg is poached, please set aside. Next, Dice red onion and prepare salad dressing. In a small jar, mix the olive oil, vinegar, mustard, salt and pepper. On a salad plate, arrange the washed frisee salad (that has been torn into bite size pieces) and add the bacon, onions, and croutons. Top with poached egg and pour dressing over the salad. Tip: How to poach an egg

Crack the egg and empty the contents of the shell into a small bowl. Pour 4 inches of water into a pan, and over medium heat, bring the water to a boil. Stir the water in a circular motion, then drop the egg into the middle of the swirl of water. Turn down the heat slightly and cook three to five minutes. Use a slotted spoon to remove the egg and place it on a plate.

Wild Walnut and Mushroom Ravioli

10 ounces mushroom ravioli or cheese-filled ravioli
2 tablespoons olive oil
2 ounces shiitake mushrooms, sliced
4 ounces button (table) mushrooms, sliced
¼ cup of chopped walnuts, shelled and chopped
1 clove garlic, minced
1/4 cup brandy
1 cup heavy cream
1/2 teaspoon nutmeg
Salt and pepper
1/2 cup grated parmesan cheese

Directions: Prepare ravioli according to package directions; drain. Next, over medium heat, pour olive oil in a skillet (or spray Pam Olive Oil) and cook mushrooms until tender. Next add 1/4 cup of chopped walnuts, add garlic and brandy, and cook for 2 minutes. Slowly stir in heavy cream and bring to a simmer. Season with nutmeg, salt, and pepper. When cream has thickened, stir in 1/4 cup of parmesan cheese. Then, stir in cooked ravioli, and gently simmer for 1 to 2 minutes. Serve with parmesan, garnish with walnuts and serve with garlic bread, and salad. Makes 2 servings.

Love at First Bite, Red Velvet Cupcake, excerpt from Twilight Cookbook

Red Velvet Cake

4 tablespoons cocoa powder
1 ounce liquid red food coloring
3/4 cup water
1 yellow cake mix, with pudding in the mix
4 eggs
1 teaspoon vanilla extract
1 teaspoon butter
4 tablespoons buttermilk
1 tablespoon white vinegar

Directions: Preheat oven to 325°. In a large bowl, mix cocoa powder, red food coloring, and part of the water to form a paste. Next, add all of the other ingredients except the white vinegar. Blend for 2 1/2 to 3 minutes with a mixer on medium speed. Then add the vinegar and mix with a spatula. Pour the batter into a bunt or round cake pan, and bake for approximately 35 minutes. This recipe can be made into cupcakes as well.

Adorn each cupcake or the entire Red Velvet Cake with various miniature die-cast Cullen cars, such as Carlisle’s Mercedes S55 AMG, Rosalie’s red BMW M3, Edward’s silver Volvo S60R, Alice’s yellow Porsche 911 Turbo, or Emmett’s Jeep Wrangler. A replica of Bella’s red Chevy pickup truck could also be added.

First Love Chocolate Mousse Recipe

First Love Chocolate Mousse

8 ounces semisweet chocolate chips
2 tablespoons strong coffee
2 tablespoons orange extract
1 egg yolk
2 egg whites
A pinch of salt
2 tablespoons sugar
1/2 cup heavy cream (or 1/2 carton of cool whip)

Directions: Melt the chocolate, with coffee added, over low heat. Remove from heat and add first the orange extract and then the egg yolk, stirring till the mixture is smooth. In another bowl, beat the egg whites and salt; add the sugar and beat with an electric mixture until stiff peaks form. Lastly, whip the cream until it is stiff; fold into the egg whites. Fold egg white mixture into the chocolate mixture. Place in the refrigerator, and chill until ready to serve.

What advice would you give teenage girls?
That is a great question. The children are our future and being a teenage girl once and having two teenage daughters currently, I am aware at what a huge transition time it is. What I mean by transition time is it is when a girl grows into herself and emerges from being a silk worm (then the cocoon) into a butterfly. My advice to all teenage girls is to be yourself, find your passions, explore all of your interests, don't cave to peer pressure, accept yourself for your unique personality and to be persistent with your dreams and goals. The person I am today is a direct result of the person I was beginning to become in high school (I started peer counseling, because my school didn't offer it and a wonderful teacher of mine agreed to facilitate, I also wrote for the school newspaper, which was not only fun and engaging but also educational, I learned how others viewed the world, my parents also allowed me to go to Europe for the summer of my Sophomore year, this too shaped my understanding of the world and gave me compassion for others). Often times, the school environment or even the home environment isn't the right match for a teenage girl. Seek out friends, peers, and adults you can trust that uplift your own unique spirit. Switch schools if the environment doesn't fit for you, even if it is more of a sacrifice for your parents or yourself, it is worth becoming the best you can be, but if you are in an environment that negatively affects your self worth, you must stand firm and stand up for yourself, no one will do it for you!

Harry’s Famous Fish Fry

4 cups cooked rice
About 2 pounds fresh fish fillets, such as filet of sole, whitefish, or salmon filets
3 or 4 green onions, sliced, including green parts
5 to 7 fresh mushrooms
2 medium zucchini
¼ cup of Lemon juice
2 cups sauce, cooled slightly
Parchment paper or aluminum foil

Harry’s Secret Sauce
1 (14.5-ounce) can chicken broth
1/2 cup dry white wine
1/4 cup cornstarch, mixed with 1/4 cup cold water
2 tablespoon grated Swiss cheese
2 tablespoons grated parmesan cheese

HARD

Directions: In a medium-sized saucepan, heat chicken broth and wine over high heat, stirring in approximately half of the cornstarch mixture. While continuing to stir, cook the mixture until it thickens; reduce heat to low and then add the seasonings. Let cool slightly before assembling the fish packets.

The assembly of the packets starts with four 18- by 15-inch sheets of parchment (or aluminum foil). Fold each sheet in half to make 9- by 15-inch pouch. Place one-fourth of each of the ingredients—rice, green onion, mushrooms, fish, other veggies, lemon juice, and Harry’s secret sauce—into each pouch. Seal and place packets on a baking sheet in a 425° oven for 20 minutes.

cooked Edward’s Cornflake Chicken.-Kevin Malone, The Office TV Show

Edward’s Cornflake Chicken

10 drumsticks, washed
3 cups of cornflake cereal, crushed
¼ cup of vegetable oil
Salt and pepper to taste

Directions: Heat oven to 425 degrees. Remove skin off of drumsticks and wash and dry chicken thoroughly and pat dry with paper towels. In a large baking dish, pour oil and dip and roll chicken in the oil. In a large plastic sealed type bag, place 3 cups of cornflake cereal, salt and pepper to taste and seal. Make sure all air is out of the bag, and crush cornflakes with a wooden spoon or a rolling pin. Next, take drumsticks one at a time and place in the crushed cornflakes, reseal plastic bag and shake until chicken is thoroughly coated with the crushed cornflakes. Place chicken drumsticks in an ungreased 8 x 11.5 baking dish and bake for forty five minutes, uncovered. Serves 10.

Hi, I really enjoyed talking with you at Borders. I already read both your books, and can't wait to make the squash and tomato parmesan as soon as our backyard garden matures! I also appreciated that you had a vegetarian version of the enchiladas. (real vegetarian, not Cullen vegetarian, lol)
I was telling you a bit about how I'm an aspiring writer, too. My first real job is adapting a children's book into a play. I think the hardest part is that it's a Christmas book, and I'm writing it over the summer. Of course, I was thrilled to be approached by the author, and I'm grateful for the work.
Other than that, I've been writing screenplays. This August, I'm going to the Willamette Writer's Conference in Portland, Oregon, where I'll be pitching my work.
Do you have any advice for someone like me, who's just starting out as a writer? I'd appreciate any knowledge you have to share!

Fun Fact: Today is World Baseball Classic Finals Day, one of the most amazing scenes from the Twilight movie is when the Cullen Clan take Bella out in a rainstorm for "America's Favorite Past time, Baseball, of course. Here is a recipe for the humans, Take Me Out to a Ball Game Nutty Cluster Cookies. Just make sure there are no vampires around to smell this nutty creation, they might just want to convert.

Take Me Out to a Ball Game Nutty Cluster Cookies
4 squares of chocolate, divided
1 cup of granulated sugar
½ cup plus 2 Tablespoons of butter or margarine
1 egg
1/3 cup of buttermilk
1 teaspoon of vanilla extract
1 ¾ cup of flour
½ teaspoon of baking soda
1 cup of mixed salted nuts, chopped
2 cups of powdered sugar
2 to 3 Tablespoons of water
Directions: Place granulated sugar, ½ cup of butter or margarine in a large bowl and blend until smooth, with an electric mixture. Next beat in the melted chocolate, gg, buttermilk and vanilla extract, then stir in the flour and baking soda until blended, then add the nuts. Drop teaspoonfuls of dough 2 inches apart onto a cookie sheet. Bake in a 400 degree oven for 8 to 10 minutes, quickly transferring to a wire rack to cool. The icing is made from the remaining 2 squares of chocolate and 2 Tablespoons of butter in a saucepan over low heat, stirring constantly until melted. Add the powdered sugar and water to the melted chocolate and top cookies with chocolate frosting.

A special thanks to the Borders on Santana Row in San Jose, California for hosting a truly Twilightful event. What a wonderful experience to be a part of the Twilight Festivities. April, Amanda, and Dan all put on a fun Twilight party, treating the crowd to a round of Baseball. The group of over 50 participants was divided into two groups, with very tough trivia questions with the answers being either 1) from the book, or 2)from the movie. The Twilight fan club really couldn't be stumped. We were treated to snacks of banana chocolate chip muffin samples, ghiradelli chocolate, and winners of the raffle received a 5x7 photo of various scenes from the Twilight movie. After a brief intermission, I hosted an easy Twilight trivia contest, from my book, Love AT First Bite, The Unofficial Twilight Cookbook. I also read the introduction from the book and called on the audience for the answers to the trivia questions. The earlier contest was geared to a more sophisticated teen to adult crowd, meaning the trivia was tough. My questions helped the younger crowd to feel a part of the festivities. Including Jacob, a seven year old who wanted me to guess him name. I guessed Edward, sorry Jacob! We watched a very brief "hello" from the stars of the Twilight movie. After the contests (there was a planned Scavenger hunt that I will post,(I have the coveted hunt question, yippie that there wasn't time for), I was available for photos, autographs, and questions about the recipes found in Love At First Bite. The Borders Event took place close to the cafe upstairs and downstairs was even more packed by midnight with more Twilighters coming to just purchase the DVD. Borders handed out tickets and called numbers. Over 150 people were downstairs picking up any and all Twilight merchandise including Sweatheart Twilight Candy, posters, my cookbook, and of course, what we all came for, the Twilight on DVD. Me and my daughter Lauren left at about 12:30am, without a Twilight DVD, but it was very nice to see the younger girls, age 8 first in line for the DVD, as it was a late fun night and wonderful experience. A special shout out to Virgina, how wore a tee shirt emblazoned with, "Twilight Mom" and all the sweet teenagers who have so many wonderful suggestions, ideas, and things going on in their lives. Thanks for making this author feel like a Star! Oh, and the crowd thought it was very cute my last name being Meyers. "Hey, is your sis Stephenie Meyer they shouted?"

Pick a Scene from the Twilight movie. Chose your favorite moment: the baseball scene, perhaps the Prom scene, maybe Bella meeting the Cullens for the first time.
Decorate doorways, the birthday room, the front door, the kitchen, even outside if your party will be outdoors. Decorate with streamers, Twilight posters and colorful balloons. -Bring a coat or jacket (in case you have to wait outside)

A Snack to Serve your friends, excerpt from Love At First Bite, The Unofficial Twilight Cookbook: Too Hot to Handle Popcorn and Port Angeles Snack Attack.
Too Hot to Handle
8 quarts of plain popped popcorn
1 cup butter or margarine
½ cup light corn syrup
1 package of red-hot candies.

Directions: Place popcorn in a large bowl and set aside. In a saucepan, combine butter, corn syrup and red hot candies, bring to a boil over medium heat stirring constantly. Pour the mixture over the popcorn and mix thoroughly. Place popcorn mixture onto a baking pan and bake at 250 degrees for 50 minutes. To cool, remove from the pan and place on waxed paper.

Port Angeles Snack Attack
2 7-inch flour tortillas
2 Tablespoons strawberry cream cheese
¼ cup of raisins
¼ cup of dried cranberries
1 cup finely chopped green apples
1 teaspoon sugar and cinnamon combined

Directions: Finely chop apples and place them in a medium sized bowl. Add cranberries, raisins, and sugar cinnamon mixture and stir. Then, fry the tortilla with one tablespoon of margarine in a skillet till crisp. Place tortilla on a paper towel to take off excess margarine and to cool. Once cooled, spread cream cheese and top with apple concoction.

Charlie’s Catch of the day Crab Cakes

1 Egg

3 Tablespoons of mayonnaise

4 teaspoons of lemon juice

1/8 teaspoon of red pepper flakes

1 teaspoon of dried tarragon

1 Tablespoon of minced green onions

8 ounces of crabmeat

1 Tablespoon of butter

Round crackers, broken up into cracker crumbs

Directions: In a medium bowl, whisk together the egg, mayonnaise, lemon juice, red pepper flakes, tarragon, and green onions. Gently stir in the crabmeat, and mix in cracker crumbs, adding as much as desired. Next, melt butter in a skillet over medium heat. Form crab patties and place in the skillet brown both sides until the patties are golden brown. Depending upon the size of the patties, makes about four crab cakes.

Werewolf Chow

9 cups of Chex Cereal, Rice

¼ cup of butter or margarine

1 cup of chocolate chips, semisweet

Or a combination of ½ cup of chocolate chips and ½ cup of peanut butter chips

½ cup of smooth peanut butter, not crunchy

1 teaspoon of vanilla extract

1 ½ cups of powdered sugar

Directions: In a large zip lock bag place the cereal. Next, microwave the chocolate chips, peanut butter and butter or margarine for about one minute. If the mixture hasn’t melted, stir and place in microwave another 20-30 seconds. Once melted, stir in the vanilla extract. Pour the chocolate chip peanut butter mixture over the chex cereal and add the powdered sugar and shake. You may place mixture on waxed paper to spread the mixture out for cooling purposes. Place in a bowl, such as a brand new dog bowl. May add a sugar cookie bone shaped cookie to top of werewolf chow.

Edward’s Thirst Quencher

3 Large Ripe Peaches

3 Large Lemons

3 Large Oranges

1 Cup of Sugar

3 Cups of Strawberries

3 Cups of Raspberries

1 Two Liter Bottle of Ginger Ale, cold and chilled

Some ice cubes

15 to 20 Strawberries

Directions: Peel and section the lemons, and oranges and remove the peach skins and pits, and cut them into thin slices. Next, place the peaches, lemons, oranges, and sugar into a blender. Pour into a punch bowl, add ginger ale and ice cubes. Float strawberries and orange slices on top of Edward’s Thirst Quencher.

About the Author

Gina Meyers has a Bachelor of Science degree in Business/emphasis in Marketing from California State University, Fresno as well as her emergency teaching credential. From an early age, Gina has had a passion for the culinary arts, experimenting in the kitchen, baking breads, muffins, cookies, and cakes. She mastered pizza dough from scratch at age twelve, but flopped when she tried making fortune cookies. From 1997 to 2004, she taught a plethora of entertaining and fun cooking classes for kids from “Easy Meals in Minutes” to “Storybook Cooking and Crafts”, green eggs and ham anyone? She is in her 13th year of teaching Summer Fun classes for children and teens, focusing her energies on the French foreign language.

Her love of cooking has rubbed off on her three children Makenna, Lauren, and Lucas. She is married to David, a graphic designer and they reside in Central California. This is Gina’s fourth book. Her first three titles are about the ever-enchanting, nineteen-sixties sitcom Bewitched, which have sold over 2,500 copies to date.
